Daen Lia’s Blue Cheese, Prosciutto, Pear, and Hot Honey Toastie

Is anyone else craving a freshly made Blue Cheese, Prosciutto, Pear, and Hot Honey Toastie on a chilly day?

Daen says: “This sweet and savory toasty is a jazzed-up version of a more traditional humble toasty. Not only does it use Fromager d’Affinois Bleu, the most indulgent triple cream cheese going around, but it’s also filled with prosciutto, sliced pears, and hot honey. The sweet and spicy honey perfectly balances the mildly sharp taste of the blue cheese. My secret to making the perfect toasty is to spread the outside layer with mayonnaise as this will result in the most golden and crispy toastie.”

For the hot honey:
 500ml honey
 2 tablespoons chili flakes
 1 teaspoon tabasco sauce
 2 tablespoons lemon juice
For the toasty:
 2 slices white sourdough bread
 50-75g Fromager d’Affinois Bleu cheese cut into thick strips
 Half a pear cut into thin strips
 50g prosciutto shaved into thin slices
 1 tablespoon hot honey
 2 tablespoons mayonnaise
 50g butter
 1 tablespoon olive oil
For the hot honey:

Combine all ingredients in a small pot. On medium heat, cook until the honey is bubbling and has a runny consistency.

As this makes a large batch, store it in a sterilized jar for several months in your pantry.

For the toasty:

Spread 1 tablespoon of mayonnaise onto the bottom piece of bread for your toasty and flip over. Begin with a layer of Dijon mustard, followed by the Fromager d’Affinois Bleu cheese, topped with slices of pear, and lastly the prosciutto. Finish off with a drizzling of hot honey.

Top the toasty with a slice of bread and spread 1 tablespoon of mayonnaise over the top.

In a cast iron pan on low heat, melt the butter and bring the olive oil to heat. When the butter is slightly foaming, place the toasty into the pan and cook on very low heat for 10 minutes per side or until golden and crispy. Serve immediately.
